Prepare your carrots as you like them - peeled/unpeeled, baby carrots or standard carrots cut into batons etc
Boil in salted water until tender - roughly 5-6 minutes
Remove the carrots and allow to dry in the air for a few minutes
Meanwhile add your butter to a frying pan on a medium to high heat. Drop the carrots into the pan and shake about so the melted butter covers all the carrots evenly
Add the chopped parsley, thyme and nutmeg
The carrots should be browning a little, now add the honey and allow to caramelise until glossy
Add a little more butter to loosen them, season with salt & pepper and serve!
