Salted Lemon Chicken Fillets

4 no. Chicken Fillet

2 tsp Sea Salt 

2 tsp Garlic Salt

2 Lemons, finely grate 

65 ml Olive Oil

½  cup Self-Raising Flour (use gluten free self raising flour to be gf )

1 tsp Chilli Flakes

Preparation Method
  1. Pre-heat oven to 190 c.
  2. Combine Sea Salt, Garlic Salt, Chilli Flakes and grated Lemon rind in a bowl. Add Olive Oil and stir to combine to create a marinade.
  3. Rub some of the marinade over the Chicken Fillets and dust with self-raising flour.
  4. Take a sealable cooking bag and place the chicken fillets and the remainder of the marinade in it and toss to coat the chicken fillets evenly.
  5. Place the bag and its contents on a baking tray on the middle shelf of the pre-heated oven and cook for approx. 20 minutes.

Delicious served with baked potato
